Brinjal, Broad Beans, Radish And Dill leaf Stir-Fry

BRINJAL, BROAD BEANS, RADISH, AND DILL LEAF STIR-FRY

Hello and welcome dear friends once again. Today I’ll be sharing a simple, healthy, all green and tasty stir-fry recipe of Brinjal, Broad Beans, Radish And Dill Leaf Stir-Fry. It’s super easy to make and can be had with lunch or dinner platters. So let’s start—

Ingredients:

  1. Brinjal -250 gms.
  2. Broad beans -200 gms.
  3. Radish – 100 gms.
  4. Dill leaves- 50gms.
  5. Fenugreek leaves – 50 gms.
  6. Salt – According to taste.
  7. Turmeric powder – 1/2 tsp.

For tempering:-

  1. Five spice – 1/2 tsp.
  2. Dry Red Chilly – 1 1/2.
  3. Vegetable oil – 2 tbsp.

STEPS

Step 1 

Wash and cut all the vegetables finely.

Step 2 

Heat a pan. Add some vegetable oil in it. Now add half teaspoon five spices, one and a half dry red chilies and let it crackle.

Step 3 

Now add the cut veggies and salt and turmeric powder to it.

Step 4

Add slight water so that the veggies get cooked and cover it with a lid. Let it cook by steam. Take the lid off and fry it on a high flame for five minutes.

Step 5

Our dish is ready. Garnish it with chopped coriander.

Red Lentil And Onion Fritters

RED LENTIL AND ONION FRITTERS

Hi, dear friends.Welcome to my space again. Today I’m sharing a snack recipe made from red lentil and onions which is super tasty, crunchy and will leave you addicted to its taste. It can be had with tea and puffed rice mixture in the evening or at brunch time. So let’s start making it—

Ingredients:-

  1. Red Lentil – 300 gms.
  2. Onions(finely chopped) – 1.
  3. Green Chillies (finely chopped)- 2.
  4. Asafoetida or Hing -A Pinch.
  5. Salt – According to taste.
  6. Chopped fresh coriander -A handful.

STEPS

Step 1 

Wash and soak the red lentils for four hours. Grind the lentil slightly coarsely.

Step 2 

Add chopped onions, green chilies, salt, asafoetida, and coriander to the lentil batter.

Step 3 

Mix it up well. Heat oil in a wok. When it is hot add dollops of the batter in the oil and fry it up.

Step 4

Take out the fritters on a tissue paper and serve with green chutney or green chilly sauce.

Our Red Lentil Fritters are ready.

Split Bengal Gram With Pumpkin

SPLIT BENGAL GRAM WITH PUMPKIN

Hello and welcome dear friends once again. Today I’ll be sharing a lentil recipe made from split Bengal gram mixed with pumpkin. It is very healthy, is mildly spiced and tastier too. So let’s start—

Ingredients:-

  1. Split Bengal Gram – 300 gms.
  2. Pumpkin(cubed) – 1/2 of 1 whole.
  3. Onions – 1
  4. Dry Red Chilly(whole) -3
  5. Salt – According to taste.
  6. Turmeric Powder -1 tsp.
  7. Red Chilly Powder – 1 tsp.
  8. Bay Leaf -2.
  9. Asafoetida or hing- A pinch.
  10. Garam Masala – 1 tsp.
  11. Butter – 1 tbsp.
  12. Tomato Puree -1 tbsp.
  13. Cumin Powder -1 tsp.
  14. Cumin seeds(whole) -1 tsp.
  15. Coriander Leaves – For Garnish.
  16. Cashews and Raisins, Dry Coconut Flakes – Optional.

STEP

Step 1 

Scrape, wash and cut the pumpkin into small pieces and pressure cook the split Bengal gram with it adding a pinch of salt, turmeric powder and a clove of garlic to the cooker.

Step 2

Now heat a heavy bottomed pan adding some butter, cumin, bay leaf dry whole red chillies, asafoetida and some. Grind the onions to a paste.

Step 3 

Now when the butter melts add the onion paste, slight salt(as some has already been added to the chana dal while pressure cooking it), red chilly powder, tomato puree, cumin powder and saute it for five minutes.

Step 4

When the masalas get pinkish add the boiled dal with pumpkin and also add one tsp of garam masala. Mix everything well and cook it for five more minutes.

Step 5 

Mix some fresh cream in the dal.

Step 6

Garnish with freshly chopped coriander.

Note point – You can also add some cashews and raisins and dry coconut flakes if you like but it is just optional.

Sweet And Tangy Amaranth Greens

SWEET AND TANGY AMARANTH GREENS

Hello and welcome everybody. Today we are going to make a very simple, nutritious and tasty recipe of amaranth which is a bit sweet and a bit tangy. It is unique and very healthy. It can be had with steamed rice and mashed potatoes which is a rural combination of presenting it. But I liked it anyhow so I am mentioning it here. Let’s start with its making—

Ingredients:

  1. Tender Amaranth Greens-1/2 kg.
  2. Chopped Onions – 1
  3. Green Chillies(chopped) – 1
  4. Salt – According to taste.
  5. Turmeric powder – 1/2 tsp.
  6. Sugar or sugar-free -1 tsp.
  7. Lemon juice -2 1/2 tbsp.
  8. Asafoetida – A pinch.
  9. Vegetable oil – 2 tsp.

STEPS

Step 1

Wash and cut the amaranth greens and pressure cook it till done.

Step 2 

Now strain the excess water out of the greens and squeeze it and put it in a bowl.

Step 3

Take a vessel and add 2 tsp of vegetable oil to it. Add five spices and a pinch of asafoetida or hing and let it crackle.

Step 4

Now add the chopped onions and fry it till half done. Add the boiled amaranth to it and add salt, turmeric powder to it and saute it for five minutes. Switch off the gas and let the greens cool. Now add 1 tsp of sugar or sugar-free and the given amount of lemon juice. Add green chilies lastly. You can substitute the lemon juice with dry mango or amchoor powder.

Our Sweet And Tangy Amaranth Greens is ready. Serve it with main course.

Note points –1. Try to use tender fresh leaves of amaranth.

2. Put lemon juice in the dish when you take it off your gas and when the greens get cooled. Otherwise, it will get bitter in taste.

3.If you are a diabetic use sugar-free instead of sugar.

Lotus Seed Sweet Meats

LOTUS SEED SWEET MEATS

Hello everybody and welcome to my recipe corner once again. Today we’ll be making a very unique dish of lotus seeds cooked in sugar syrup. It has got a very great taste, is crunchy and is a sweet snack. So here we go —

Ingredients:-

  1. Lotus seeds – 250 gms.
  2. Sugar – 300 gms.
  3. Water -1 1/2 cup.

STEPS

Step 1

Roast lotus seeds in a heavy bottom vessel till a little brownish.

Step 2 

Now take a vessel, add one and a half cup of water and add to it the given amount of sugar and cook it on a high flame to make a one-string thick syrup.

Step 3 

Mix the lotus seeds in the sugar syrup and cook it on a medium flame till dry.

Our Lotus Seed Sweetmeats are ready to be enjoyed.

Raw Banana Kofta

RAW BANANA KOFTA

Hello friends and welcome once again to my site. Today I’ll be sharing with you a curry recipe of raw bananas made into koftas. These are soft, creamy, delicious and really a treat to your senses. Let’s start making it—

Ingredients:-To make the banana balls.

  1. Raw Bananas – 4.
  2. Gram Flour – 200 gms.
  3. Onions(finely chopped) – 1 1/2.
  4. Green Chillies(finely chopped) – 3.
  5. Salt – a little bit.
  6. Red Chilly powder – 1 tsp.
  7. Cashew(crushed) – 1 tbsp.
  8. Garam Masala or Five Spice Powder- 1 tsp.
  9. Coriander Leaves – A handful.

To make the gravy.

  1. Vegetable oil – 2 tbsp.
  2. Cumin – 1 tsp.
  3. Asafoetida or hing- a pinch.
  4. Curry leaves -5.
  5. Onions(finely chopped)-1.
  6. Tomato puree – 2 tbsp.
  7. Cumin powder -1 tsp.
  8. Salt – according to taste.
  9. Turmeric powder – 1 tsp.
  10. Red Chilly Powder -1 tsp.
  11. Poppy seed – cashew paste -5 tbsp.
  12. Garam Masala or Five Spice Powder- 1 tbsp.
  13. Sugar – 1 tsp.

STEPS

Step 1 

Pressure cook the whole raw bananas without cutting or scraping it. Now scrape the skin off the bananas and mash them up.

Step 2

Take a bowl, add gram flour to it, also add chopped onions, green chilies, a little bit of salt as more has to be added in the gravy, red chilly powder, garam masala, slight sugar and coriander leaves and make a dough-like batter so that balls can be formed. We don’t need to add water to it.

Step 3

Fry these banana balls in hot oil till light brownish in color. Strain and keep aside.

Step 4 

Now to make the gravy, heat a wok and add 2 tbsp of vegetable oil to it. Add 1 tsp of cumin, the given amounts of curry leaves, green chilies and asafoetida to it. When they crackle add finely chopped onions and saute for two minutes. Next add 2 tbsp of tomato puree, cumin powder, salt, turmeric powder, red chilly powder, garam masala and fry these till their rawness disappears.

Step 5

When the masalas in the pan start to give a good aroma add the given amount of poppy seed-cashew paste and fry it for three minutes, add some water to make a thick gravy. Now add the banana balls and let them get soaked so that the balls will be softer and a sumptuous gravy will be made.

Step 6

Garnish with some chopped coriander and fresh cream.

Our Raw Banana Kofta Curry is ready. It can be had in the main course, both lunch, and dinner.
