HORSE GRAM DAL

Hi and welcome my awesome lovely friends to my cozy food corner once again, love you all. As we all know that lentils or pulses are the great sources of protein and energy, today I want to share a recipe of a dal made from horse gram which is rich in many vitamins and minerals and removes stones from the stomach along with reducing cholesterol levels drastically. Today I will be making this Horse Gram Dal with some selected veggies and hing ka tadka. You too can try it someday and if you do let me know how you liked it. So the recipe is as follows:—

Ingredients:

  1. Horse Gram Dal – 250 gms.
  2. Brinjal(big) – 1.
  3. Radish – 1/2 of 1.
  4. Tomato – 1.
  5. Salt – According to need.
  6. Turmeric powder – 1/2 tsp.
  7. Asafoetida – A pinch.

For the tadka

  1. Cumin- 1/2 tsp.
  2. Black mustard – 1/2 tsp.
  3. Dry red chilly – 2.
  4. Bay Leaf – 1.
  5. Vegetable oil – 1 tbsp.

For garnishing – Freshly chopped coriander.

STEPS.

Step 1

Take the split horse gram in a vessel and dry roast it. Now take a pressure cooker and add the ingredients for the tadka into it. Now when it splutters add the chopped veggies, brinjal, radish and tomato and fry it for two minutes. You can add other veggies too of your choice, though here I have used the above-mentioned ones because they give a special taste to the dal. Now wash the roasted dal and add it along with salt and turmeric powder and enough water. Also, add the chopped coriander and pressure cook the dal for ten minutes or till done. I have added hing by mixing it with the water, ie, in raw form and not in tadka form because this will give a special sort of taste to the dal. I generally use hing in most of my recipes except the non-vegetarian items because it gives a complete and unique taste to my dishes and is very good for digestion too.

IMG_2713Our Horse Gram Dal is ready. Serve it with steamed rice, Indian mashed potatoes, fried poppadums and rice fritters. I will share the recipe of rice fritters in my upcoming posts.

Sweet And Tangy Tuar Dal

SWEET AND TANGY TUAR DAL

Hello friends, today I’ll be sharing with you a simple recipe of a lentil that is made regularly in Indian kitchens and I have made it a bit sweet and a bit tangy. It’s simple and good. The recipe is as follows—

Ingredients:-

  1. Toor Dal – 250 gms.
  2. Turmeric Powder – 1/2 tsp.
  3. Salt – According to taste.
  4. Tamarind Paste – 1 tsp.
  5. Sugar or Sugar-free – 1 tsp.

For Tempering:-

  1. Cumin – 2 tsp.
  2. Dry Red Chillies – 2.
  3. Vegetable Oil – 2 tsp.

For Garnishing:-

  1. Fresh Cream – 1 tbsp.
  2. Fresh Green Coriander – A handful.

STEP

Step 1

Wash the toor dal. Take a wok and add 2 tsp of vegetable oil in it. Next, add 2 tsp of cumin along with 2 dry red chillies. Let them crackle.

Step 2 

Now add the washed toor dal and roast it for five minutes. Now add salt, turmeric powder and required amount of water and pressure cook it till done.

Step 3

When the dal is done take it out in a deep bottomed vessel and add the given amounts of tamarind paste and sugar or sugar-free. Cook it for two minutes and garnish with chopped coriander and fresh cream. The dal will have a sweet and tangy touch, just great.

Our Sweet And Tangy Tuar Dal is ready to be served. It can be best enjoyed with steamed rice, chapatis, and stir-fried veggies.

Red Lentil And Onion Fritters

RED LENTIL AND ONION FRITTERS

Hi, dear friends.Welcome to my space again. Today I’m sharing a snack recipe made from red lentil and onions which is super tasty, crunchy and will leave you addicted to its taste. It can be had with tea and puffed rice mixture in the evening or at brunch time. So let’s start making it—

Ingredients:-

  1. Red Lentil – 300 gms.
  2. Onions(finely chopped) – 1.
  3. Green Chillies (finely chopped)- 2.
  4. Asafoetida or Hing -A Pinch.
  5. Salt – According to taste.
  6. Chopped fresh coriander -A handful.

STEPS

Step 1 

Wash and soak the red lentils for four hours. Grind the lentil slightly coarsely.

Step 2 

Add chopped onions, green chilies, salt, asafoetida, and coriander to the lentil batter.

Step 3 

Mix it up well. Heat oil in a wok. When it is hot add dollops of the batter in the oil and fry it up.

Step 4

Take out the fritters on a tissue paper and serve with green chutney or green chilly sauce.

Our Red Lentil Fritters are ready.

Split Bengal Gram With Pumpkin

SPLIT BENGAL GRAM WITH PUMPKIN

Hello and welcome dear friends once again. Today I’ll be sharing a lentil recipe made from split Bengal gram mixed with pumpkin. It is very healthy, is mildly spiced and tastier too. So let’s start—

Ingredients:-

  1. Split Bengal Gram – 300 gms.
  2. Pumpkin(cubed) – 1/2 of 1 whole.
  3. Onions – 1
  4. Dry Red Chilly(whole) -3
  5. Salt – According to taste.
  6. Turmeric Powder -1 tsp.
  7. Red Chilly Powder – 1 tsp.
  8. Bay Leaf -2.
  9. Asafoetida or hing- A pinch.
  10. Garam Masala – 1 tsp.
  11. Butter – 1 tbsp.
  12. Tomato Puree -1 tbsp.
  13. Cumin Powder -1 tsp.
  14. Cumin seeds(whole) -1 tsp.
  15. Coriander Leaves – For Garnish.
  16. Cashews and Raisins, Dry Coconut Flakes – Optional.

STEP

Step 1 

Scrape, wash and cut the pumpkin into small pieces and pressure cook the split Bengal gram with it adding a pinch of salt, turmeric powder and a clove of garlic to the cooker.

Step 2

Now heat a heavy bottomed pan adding some butter, cumin, bay leaf dry whole red chillies, asafoetida and some. Grind the onions to a paste.

Step 3 

Now when the butter melts add the onion paste, slight salt(as some has already been added to the chana dal while pressure cooking it), red chilly powder, tomato puree, cumin powder and saute it for five minutes.

Step 4

When the masalas get pinkish add the boiled dal with pumpkin and also add one tsp of garam masala. Mix everything well and cook it for five more minutes.

Step 5 

Mix some fresh cream in the dal.

Step 6

Garnish with freshly chopped coriander.

Note point – You can also add some cashews and raisins and dry coconut flakes if you like but it is just optional.

Roasted Gram Flour Parantha With Mashed Brinjals

ROASTED GRAM FLOUR PARANTHA WITH MASHED BRINJALS

Hi, friends welcome again. Today we will be together making Gram Flour or SattuParanthas with mashed brinjals. It is a common dish of Bihar, usually had in breakfast. So let us start—

Ingredients:For the dough

  1. Wheat flour – 400 gms.
  2. Water – As per requirement to make a smooth pliable dough.

For the filling:

  1. Roasted gram flour – 250 gms.
  2. Finely chopped onions – 1.
  3. Finely chopped green chilly -1.
  4. Finely chopped garlic – 1 tbsp.
  5. Finely chopped ginger – 1 tbsp.
  6. Carom seeds or Ajwain – 1 tsp.
  7. vegetable oil – 1 tbsp.
  8. Salt -According to taste.
  9. Lemon juice – from 2 lemons.

STEPS

For making the dough:-Step 1

Take the given amount of wheat flour and using water make a smooth, pliable dough. Keep it aside.

For making the filling:-

Step 1

Take the gram flour in a bowl and to it add the finely chopped onions, green chillies, cut ginger, garlic, salt, carom seed, vegetable oil and lemon juice and mix all up well.

Step 2

Now roll out small rounds from the dough and in it fill the gram flour filling and seal it up using a little water. Now roll this small ball of dough filled with the filling using a rolling pin to make a medium-sized chapati. Take care not to crack the chapati or the filling will spill out of it.

Step 3

Now take a griddle or tawa and heat it. Place the chapati in it and using some oil make out the paranthas. Take care not to burn them.

The paranthas of ‘sattu‘ or roasted gram flour are ready. Team them up with mashed brinjals, or curd dip or sweet or green chutney. It can be best had in breakfast or can suit you even at lunch or dinner.

                                               MASHED BRINJALS

For making mashed brinjals we need—

Ingredients:

  1. Big size brinjal-1
  2. Tomato -1
  3. Finely cut onions -1 small bowl
  4. Finely cut green chilly-1
  5. Salt -according to taste.
  6. Finely cut coriander leaves -A small bunch.
  7. Garam Masala -1 tsp.
  8. Vegetable Oil- tsp.

STEPS

Step 1

Wash the brinjal and make 2 slits on it.

Step 2 

Roast the brinjal on fire.

Step 3

Take a small sized tomato, clean it and roast it too.

Step 4

Now take the two veggies and mash it with a masher.

Step 5

Heat a pan and add some oil to it. Then add a pinch of cumin. When it starts to splutter add finely cut onions and green chillies to it. Fry it a bit and then add the mashed mixture to it. Now add the remaining ingredients that are salt, garam masala and chopped coriander to it. Cook it for two minutes and remove from fire. The Baingan Bharta or Mashed Brinjals are thus ready.

This dish can be had with all kinds of paranthas like the above one and radish parantha or cauliflower parantha. It can also be had with plain chapatis, pooris or rice.

Split Black Gram Fried Balls

SPLIT BLACK GRAM FRIED BALLS

Hello and welcome dear friends to my cosy corner. Today I’m sharing a fritter recipe made from split black gram which is tasty and a good substitute for poppadums or rice crispies. So let’s start with it—

Ingredients:

  1. Split black gram – 250 gms.
  2. Green Chillies -2
  3. Salt – According to taste.
  4. Cumin – A pinch.
  5. Poppy seeds – A pinch.
  6. Oil – For frying.

STEPS

Step 1

Soak the split black gram or urad overnight.

Step 2

The next day grind it with 1 green chilly and to it add the given amounts of salt, cumin and mix it up.

Step 3

Heat oil in a wok and slowly drop the urad mixture making a ball-like shape out of it.

Step 4

Deep fry the balls and during frying splutter a little bit of poppy seeds onto them. Fry them till they are lightly browned.

Step 5

Drain out the oil and put them on tissue paper.

Step 6

Serve hot with coconut chutney, green chutney, mayonnaise or hummus.
