JAGGERY THEKUA

Hello dear friends. Today I’m sharing a sweet recipe from Bihar which is a regular one in Bihar and of course made in the whole of India. It’s called Jaggery Thekua. It’s made of wheat flour mixed with jaggery and is had as an evening snack enjoyed with a cup of tea in Bihar. It is also typical of celebrations and festivals and really is a good treat to you with a unique taste. So let’s start with it—

Ingredients:-

  1. Wheat Flour – 500 gms.
  2. Jaggery powder – 400gms.
  3. Fennel Seeds – 1 tsp.
  4. Dry Coconut flakes – 2 tsp.
  5. Cold Milk – for binding.
  6. Vegetable Oil – 3 tbsp.
  7. Vegetable oil – for deep frying.

STEPS

Step 1

Take the given amount of wheat flour in a bowl. Add jaggery powder, fennel seeds, dry coconut flakes, 3 tbsp of vegetable oil and using some milk make a hard dough which will be harder than regular dough used to make chapatis. Cover with a muslin cloth and keep aside for half an hour.

Step 2

Heat some vegetable oil in a heavy -bottomed karahi and using a designer mold (saancha)give your preferred shape and design to the dough. Here I have made round shapes with the dough. Make sure the thekuas are not very thick in the center or very thin at the sides. Moderate the thickness with your hands to get perfect thekuas.

Step 3 

When the oil is quite hot drop the thekuas in the oil one by one and fry them till they are reddened uniformly on both the sides. Drain excess oil on a tissue paper.

Our Jaggery Thekuas are ready. They can be had as snacks with tea or coffee.

Note points -1. The amount of jaggery put in the recipe is very important. It should be neither too little or too much or the thekuas will be bland and too sweet respectively.

2. It is very important to put 3 tbsp of oil in the dough while binding it. Otherwise, it won’t turn out to be very crunchy.

Potato Chops With Jaggery Tea

POTATO CHOPS WITH JAGGERY TEA

Hello and welcome friends to my corner again. Today, I’m sharing with you a simple snack recipe of Potato Chops best had with Jaggery Tea which will really make your mood and time worthwhile. A simple, super snack to be made, anytime you wish to. So let’s start with this quickie—

Ingredients:-

  1. Potato – 4
  2. Onion(big) – 1
  3. Green Chillies – 2
  4. Red Chilly Powder -1 tsp.
  5. Home-made Garam Masala – 1 tsp.
  6. Eggs -5.
  7. Black Pepper Powder – 1 tsp.
  8. Salt – According to taste.
  9. Coriander – For Garnishing.

STEPS

Step 1

Wash, pressure cook and mash the potatoes using a masher. Cut onions and green chilies finely.

Step 2 

Mix salt, red chilly powder, garam masala, onions, green chilies and freshly chopped coriander in the potato batter. To make the egg wash add salt and black pepper powder to the eggs and whisk them well.

Step 3 

Now heat vegetable oil in a wok. When it is hot take some portion of the potato batter on your palm make a small flat round of it on your palm and dip it in the egg wash and drop it in the oil.  Fry them till reddish on both sides in color and blot them well on a tissue paper.

Step 4

Serve them with schezuan sauce, or simply tomato and green chilly ketchup. Our potato chops are ready thus.

                               Jaggery Tea

Ingredients:

  1. Water -2 cups.
  2. Jaggery -1 cup.
  3. Tea(leaf and finings combined)-3 tbsp.
  4. Bay leaf -2
  5. Milk -1 cup.

STEPS

Step 1

Take water in a saucepan, add two bay leaves and bring it to a boil.

Step 2

When two boils come in the water add the given amounts of jaggery along with tea and let it boil for three more minutes.

Step 3

Now we will see that the tea has changed color and become a shade darker. Switch the gas off and cover it with a lid.

Step 4 

Now warm the tea, add some milk to it according to your choice. Discard the bay leaf along with the tea residue. Enjoy it with your favorite cookies or muffins.

Red Lentil And Onion Fritters

RED LENTIL AND ONION FRITTERS

Hi, dear friends.Welcome to my space again. Today I’m sharing a snack recipe made from red lentil and onions which is super tasty, crunchy and will leave you addicted to its taste. It can be had with tea and puffed rice mixture in the evening or at brunch time. So let’s start making it—

Ingredients:-

  1. Red Lentil – 300 gms.
  2. Onions(finely chopped) – 1.
  3. Green Chillies (finely chopped)- 2.
  4. Asafoetida or Hing -A Pinch.
  5. Salt – According to taste.
  6. Chopped fresh coriander -A handful.

STEPS

Step 1 

Wash and soak the red lentils for four hours. Grind the lentil slightly coarsely.

Step 2 

Add chopped onions, green chilies, salt, asafoetida, and coriander to the lentil batter.

Step 3 

Mix it up well. Heat oil in a wok. When it is hot add dollops of the batter in the oil and fry it up.

Step 4

Take out the fritters on a tissue paper and serve with green chutney or green chilly sauce.

Lotus Seed Sweet Meats

LOTUS SEED SWEET MEATS

Hello everybody and welcome to my recipe corner once again. Today we’ll be making a very unique dish of lotus seeds cooked in sugar syrup. It has got a very great taste, is crunchy and is a sweet snack. So here we go —

Ingredients:-

  1. Lotus seeds – 250 gms.
  2. Sugar – 300 gms.
  3. Water -1 1/2 cup.

STEPS

Step 1

Roast lotus seeds in a heavy bottom vessel till a little brownish.

Step 2 

Now take a vessel, add one and a half cup of water and add to it the given amount of sugar and cook it on a high flame to make a one-string thick syrup.

Step 3 

Mix the lotus seeds in the sugar syrup and cook it on a medium flame till dry.

Our Lotus Seed Sweetmeats are ready to be enjoyed.

Split Black Gram Pancakes With Poppy Seeds

SPLIT BLACK GRAM PANCAKES WITH POPPY SEEDS

Hello and welcome back. Today I’m sharing a salty pancake recipe made from split black gram with a sprinkling of poppy seeds on it to make it crunchier, tastier and super fun. So let’s start with it—

Ingredients:

  1. Split black gram – 250 gms.
  2. Salt – According to taste.
  3. Vegetable oil – For shallow frying.
  4. Water – According to need.
  5. Poppy seeds – 1 tsp.
  6. Black or white sesame – 1 tsp.

STEPS

Step 1

Wash, clean and soak the black gram overnight in water. The next morning grind the split black gram finely using some water to make a batter of dropping consistency.

Step 2

To this batter add some salt and mix it up. Now take a pan and spread a portion of the batter using a ladle and spread it on the pan. Now spread some poppy seeds on top of the pancake evenly and shallow fry it using some vegetable oil. Cook it on medium to high flame till browned on both sides.

The pancake is ready. It is crunchy and tasty.

Note point – 1. You can use the poppy seed for coating the pancake or switch it with black sesame seeds. You can make it with crushed coconut or powdered peanuts on top of the pancake while cooking.

You can have it as a snack with a cup of hot coffee or serve it with coconut chutney.

Vegetable Poha

VEGETABLE POHA

Hello dear friends and welcome once again to my corner. Today I’m going to share a popular breakfast recipe made from beaten rice and some vegetables called Poha. It is a regular dish in the whole of India and really liked in Maharashtra. It is healthy, tasty and easy to make. So let’s start making it—

Ingredients:

  1. Beaten rice(poha)-300 gms.
  2. Fresh vegetables like Cauliflower, brinjal, potatoes(cut into small pieces)-1/2 bowl each.
  3. Onions(chopped)-2
  4. Green Chillies(finely chopped)-2
  5. Turmeric powder -1/2 tsp.
  6. Red Chilly Powder -1/2 tsp.
  7. Cumin powder – 1 tsp.
  8. Subzi (vegetable)masala – 1 tsp.
  9. Garam Masala – 1 tsp.
  10. Cashew and Raisins -A handful.
  11. Salt – According to taste.
  12. Vegetable oil – 2 tbsp.

For Garnishing:–

Freshly chopped cilantro.

STEPS

Step 1 

Heat a heavy bottom cooking pan and add the given amount of vegetable oil to it. When it gets hot add the finely chopped onions and green chilies to it.

Step 2

Now when the onions are half fried, add salt, turmeric powder, red chilly powder, cumin powder, subzi or vegetable masala and fry everything again. Now add the chopped vegetables and after tossing them twice add some water(about 1 cup)to the pan and cook it covered till the vegetables get cooked.

Step 3

In the meantime take the beaten rice or poha and clean and drain the water.

Step 4 

Now going back to our vegetables, take the lid off the pan and check whether the veggies are done or not. When they are cooked add the garam masala,  beaten rice, cashew and raisins and fry it. When beaten rice gets softer fry the poha on high flame and garnish it with freshly chopped cilantro.

Our Vegetable Poha is done.

This is a healthy dish full with taste and is an ideal one to be eaten at breakfast. It can be served with coconut chutney and some fresh fruits.

Potato Cutlets

POTATO CUTLETS

Hello and welcome dear friends once again. Today I’m sharing a regular snack recipe which is made in most of the households for an evening snack and is really likeable. It’s Potato Cutlets with Sweet And Tangy Dry Mango Powder Chutney and is made in minutes. So let’s start with it—

Ingredients:-

  1. Potato – 4.
  2. Onion – 1 (small).
  3. Carrot (grated)- 1.
  4. Cauliflower (grated) – 2 tbsp.
  5. Peas – 2 tbsp.
  6. Salt – According to taste.
  7. Red chilli powder – 1 tsp.
  8. Garam masala – 1 tsp.
  9. Grated ginger – 1 tsp.
  10. Cashews and Raisins -A spluttering.
  11. Breadcrumbs – 1 bowl.
  12. Vegetable oil – to shallow fry.
  13. Chaat masala – A pinch.
  14. Coriander leaves – For garnish.

STEPS

Step 1 

Wash the potatoes and boil them. Peel the skin of the potatoes and mash them. Mix a pinch of salt and chat masala in the mashed potato.

Step 2

Take a wok and add 1 tsp oil to it. When it gets hot add finely chopped onions and saute it for 2 minutes. Now add the green peas and fry again. Now add salt, red chilli powder. When the masalas and the onions are semi-fried add the grated carrot and cauliflower and cover it with a lid for two to three minutes till the rawness of the veggies is gone and the veggies are cooked. Now add a pinch of garam masala and the cashew-raisin mixture. Fry all this together making sure they don’t get burnt. Finally, mix in some chopped coriander leaves. Let this mixture cool.

Step 3

Now make balls of medium shape out of the potato batter and making a small hole in the middle of it fill it up with the above-made carrot -cauliflower mixture. Now close the mouth of the potato ball and flatten it out on the palm of your hand slowly. Roll it up in bread crumbs and shallow fry them.

The tasty cutlets are ready to be enjoyed along with a cup of tea or coffee as a morning or evening snack. It is best served along with sweet dry mango powder chutney or green chutney.

Sweet And Tangy Dry Mango Powder Chutney

Ingredients:-

  1. Dry mango powder or Amchoor powder – 1 pack.
  2. Sugar – 1/2 cup.
  3. Red chilly powder – 1 tsp.
  4. Garam masala – 1 tsp.
  5. Ginger powder – 1 tsp.
  6. Water – 2 cup.
  7. Salt – According to taste.

STEPS

Step 1

Take a heavy bottom vessel, add 2 cups of water in it and put in on gas.

Step 2 

Add the full pack of dry mango powder to the water.

Step 3 

Now add the given amounts of sugar, red chilly powder,garam masala, dry ginger powder and salt to it.

Step 4 

Now let it cook on gas for five minutes. You will see that the mixture has become thicker.

Step 5

Let it cool. The chutney is ready. It can be stored in a jar for ten days.

Anarsa

Hello and welcome dear friends once again to my corner. Today I’m sharing a recipe of Anarsa, a savoury sweet and snack recipe of Bihar, which is tasty, easily made and is a delicacy dish made on various occasions now everywhere in India. So let’s start with it—

Ingredients:For the batter.

  1. Fresh rice flour – 1/2 kg.
  2. Sugar(powdered) – 1 1/2 cups.
  3. Vegetable oil – 2 tbsp.
  4. Curd – 1 cup. (or till you can make a pliable dough out of the rice flour).
  5. Cardamom powder – 1 tsp.
  6. Dry coconut flakes or copra – 1 1/2 tbsp.
  7. Raisin – 1 tsp.
  8. Poppy seeds – spread on a plate.

For frying –Vegetable oil.

STEPS

Step 1 

Take a bowl and put rice flour in it. Add to it the given amounts of oil, sugar, raisins, coconut flakes, and then slowly add curd to it. The given ingredients should form a pliable dough.

Step 2

Heat oil in a vessel and when it is quite hot, make mini pancakes with the dough by spreading it on your palm. Now coat it in the poppy seeds spread in a plate and drop them slowly in the hot oil. One thing to be remembered is that these pancakes are very tender so it must not be tossed too much from one side to the other as they may break in the vessel. When they become firm and reddish on one side toss it then only to the other.

Step 3

Drain the excess oil out of the cakes on a tissue paper. Enjoy.

Radish Fritters

Hello and welcome dear friends once again. Today I’m sharing with you a fritter recipe made of radish. It’s unique in taste and really easy to make. So let’s start making it—

Ingredients:-

  1. Radish  (grated) – 250 gms .
  2. Green Chilly – 1.
  3. Salt – According to taste.
  4. Gram Flour – 200 gms.
  5. Cumin seeds or Carom seeds – a pinch.
  6. Turmeric powder – 1/2 tsp.

STEPS

Step 1 

Wash and grate the radish. Squeeze out the excess water out of it.

Step 2

Cut out the green chilly in very small pieces.

Step 3

In a bowl take the grated radish, add to it the finely chopped chilly, then add the given amount of gram flour, salt, splutter some cumin or carom seeds, turmeric powder, salt and mix it all along with some water. Keep it aside.

Step 4

Heat a pan and one by one shallow fry the fritters using some oil.

Step 5 

Serve it hot with green chutney or salad with a dash of lemon in it.

Yam Fritters

YAM FRITTERS

Hello friends. Today while going through my refrigerator I came across some veggies namely peas, corn and yam. The day was a rainy one and I was in a mood to enjoy. And thus this idea came quick of making some fritters and I decided to do so with yam. Yam can be used in many ways. We generally make curries, stir-fries our of it but I decided to do something even better and thus I decided to make some crunchy munchy goodie from it. It turned out well. So let’s learn how to make a boring leisurely afternoon fun, with more taste.

Ingredients:-

  1. Yam – 250 gms
  2. Gram Flour or Besan – 250 gms
  3. Salt – According to taste
  4. Dry mango or Amchur powder – 1 tbsp
  5. Asafoetida or hing – A pinch
  6. Red chilly powder – 1 tsp
  7. Turmeric powder – 1 tsp
  8. Chaat masala(optional) – A pinch
  9. Garam Masala – 1 tsp
  10. Vegetable Oil – For Frying

STEPS

Step 1

Scrape, wash and cut the yam into thin strips and blanch it in a saucepan.

Step 2 

When the yam is firm but cooked remove it from gas and let it cool.

Step 3

Now take a vessel, add to it the given amounts of gram flour or besan, salt, turmeric powder, red chilly powder, dry mango or amchoor powder, asafoetida or hing, garam masala powder and make a smooth batter of it with water.

Step 4

Now heat oil in a wok. Dip the yam pieces in the batter and release in hot oil. Deep fry the yam until lightly browned. The fritters are done.

Step 5

Remove on tissue paper. Garnish by sprinkling some chat masala and serve with tomato or green chilly ketchup, green chutney, hummus, mayonnaise or other such dips.
