MUTTON POHA

Hello, and welcome to my cooking corner again guys. Poha is a staple breakfast recipe of every household. In my family also everyone enjoys eating pohas in the morning with a cup of tea. Poha can be made in many ways. We can make onion poha, potato poha, mixed vegetable poha, fruit poha, and the list can continue. In my earlier blogs, I have made chicken and fish poha, mutton liver poha, and noodle poha. Today I am going to share a similar recipe here but that of mutton poha. It is delicious and you can surely make it once in a while for a change from regular ideas. So let’s start with the making—

Ingredients:-

  1. Mutton-1/2 kg
  2. Thick beaten rice-300 gms
  3. Onions-4
  4. Crushed Ginger-Garlic -2 tbsp
  5. Yoghurt-3 tbsp
  6. Turmeric powder-1 tsp
  7. Red Chilly Powder-1 tsp
  8. Coriander Powder-2 tbsp
  9. Cumin Powder-1 tbsp
  10. Mutton masala or Garam Masala-1 tsp
  11. Salt-According to taste
  12. Bay Leaf-2
  13. Green Cardamom-1
  14. Butter-3 tbsp
  15. Sugar-A pinch

For garnish:-Freshly chopped cilantro

STEPS

Step 1

B612_20200302_215425_006Take a pan. Add butter. Now add chopped onions. Add bay leaf, green cardamom. Fry for a minute. Now add ginger-garlic paste. Fry again. Now add the spices salt, turmeric powder, red chilly powder, coriander and cumin powder, mutton masala or garam masala and fry again for half a minute. Add curd. Fry everything well.

Step 2

Cook the mutton completely and when the gravy thickens, add in the washed beaten rice, nuts and cook covered on a medium flame for three minutes. Add in a pinch of sugar, mix it up well and saute on a low flame.

Foxnut And Potato Tikkis

FOXNUT AND POTATO TIKKIS

Hello, everyone and welcome to my cooking corner again.Today I will be sharing a cutlet recipe of foxnuts and potato spices mildly with spices.It is tasty,made quick and requires very little effort.So do try it sometime.Now let’s start with the recipe—

Ingredients:-

  1. Foxnuts-180  gms
  2. Potato-3
  3. Onion-1
  4. Green Chillies-3
  5. Garam Masala-1 tsp
  6. Pepper Powder-1/2
  7. Lemon juice-1 tsp
  8. Salt-According to taste
  9. Cilantro-For garnish
  10. Cashews-For garnish
  11. Vegetable Oil-2 tbsp for shallow frying

STEPS

Step 1

Roast and grind the foxnuts coarsely. Boil, peel and grate the potatoes. Chop the onion, green chilies and cilantro finely.

Step 2

Take a bowl. Add the ground foxnut powder, potatoes, onion,green chilies,garam masala,lemon juice,pepper powder, salt, and cilantro and mash it well. You can add some refined flour for binding.

B612_20200206_110301_600Now make tikkis from the batter, insert one cashew on each of the tikkis and dust in some refined flour. Heat oil in a pan and shallow fry the tikkis in them till crispy and browned. Take out on a tissue paper.

Our Foxnuts And Potato Tikkis are done. Serve them with green chilly sauce or any dip of your choice.

Mixed Vegetable And Noodle Poha

MIXED VEGETABLE AND NOODLE POHA

Hello, and welcome to my cooking corner again. Hi guys, I have again come here with another nutritious recipe of poha. As we know Poha is a popular, Indian breakfast dish liked in every Indian household. It is made in different ways in different regions. It can be made in varieties like mixed vegetable poha, Power poha, Raavan poha, lemon poha, potato, onion poha. And I too have made some varieties like vegetable poha, fish poha, chicken poha, mutton liver poha, etc. Today I am sharing a similar recipe of poha with noodles, nuts, and vegetables. I hope you guys will like it and try it sometime. So let’s start with the making—

Ingredients:-

  1. Beaten Rice-100gms
  2. Noodles(Chow-Chow)-150 gms
  3. Mixed Vegetables(Cauliflower, Potato)-50 gms each
  4. Onions-2
  5. Green Chillies-2
  6. Turmeric Powder-1/2 tsp
  7. Red Chilly Powder-1 tsp
  8. Cumin Powder-1 tsp
  9. Garam Masala-1 tsp
  10. Nuts of your choice(cashew, raisins)-6 each
  11. Peanuts-7
  12. Sugar-A pinch
  13. Sauces(tomato, green chilly and soya sauce)-According to need
  14. Salt-According to taste
  15. Vegetable Oil-2 tbsp
  16. Freshly chopped cilantro-For garnish

STEPS

Step 1

B612_20200127_085206_490Wash, chop and blanch the vegetables, cauliflower, and potato. Boil the noodles till firm and done. Chop the onions and green chilies finely.

Step 2

Heat a pan and add oil in it. Now add the chopped onions and green chilies. Fry for a minute. Now add the spices, turmeric powder, red chilly powder, cumin powder,garam masala, salt, sugar and fry again. Add in the nuts and peanuts. Wash the beaten rice and keep aside.

B612_20200127_104303_645Now add the blanched noodles and beaten rice. Mix well. Now finally add sauces, tomato, green chilly and soya sauce. Mix again. And garnish with freshly chopped cilantro.

Our Mixed Vegetable And Noodle Poha is done. Serve with hot tea and boiled eggs at breakfast.

Split Bengal Gram, Spinach And Potato Tikkis

SPLIT BENGAL GRAM, SPINACH, AND POTATO TIKKIS

Hello, and welcome to my cooking corner again. You may have noticed that all of my recipes that I have made till now are simpler, healthier, and can be made in a jiffy. I really promote healthy cooking. Today I am sharing a recipe of tikkis made of split Bengal gram, spinach, and potato. It is a snack recipe. But you can have it anytime. I hope you will like this effort and try to make it. So let us try to make it—

Ingredients:-

  1. Split Bengal Gram(Chana Dal)-250 gms
  2. Spinach-50 gms
  3. Potato-1
  4. Gram Flour(Besan, roasted)-2 tbsp
  5. Onion-1
  6. Green Chillies-2-3
  7. Grated Ginger-1/2 tsp
  8. Grated Garlic-1 tsp
  9. Red Chilly Flakes-1/2 tsp
  10. Cumin Powder-1 tsp
  11. Dry Mango Powder-1/2 tsp
  12. Sugar-1/2 tsp
  13. Garam Masala-1 tsp
  14. Lemon Juice-1 tsp
  15. Salt-According to taste
  16. Vegetable Oil-2 tbsp

STEPS

Step 1

Wash and cook the Bengal gram in a vessel adding a pinch of salt making sure it is not mushy. Wash, chop and blanch the spinach. Boil and peel the potato. Chop the onions and green chilies finely. Grate the ginger and garlic.

B612_20200120_124733_173 (1)Take a pan. Add vegetable oil in it. Add in the chopped onions and green chilies. Now add the grated ginger and garlic. Fry for a minute. Now add the spices, salt, red chilly flakes, cumin powder, dry mango powder,garam masala, sugar and fry the spices well. Now add the blanched spinach and fry it for two-three minutes. Add the roasted gram flour(besan)and fry for a minute.

Step 3

Add the mashed lentil and boiled, grated potato to the spice batter. Add some chopped cilantro too to enhance the taste. Mix everything well and try to form a dough with the batter. Let the dough cool. Now add a dash of lemon juice and mix well.

Hello, and welcome to my cooking corner again. Happy Makar Sankranti to all of you. Today I am going to share a recipe of Sweet And Tangy Kidney Beans Curry. Curry is a staple of Indian cuisine. Rajma curry is a famous recipe in every household here. And it is loved by all. In my family too, my son loves to eat rajma curry with steamed rice. The recipe that I have shared is my twisted, delicious version and I wanted to put this idea of adding some dried mint, sugar, and tamarind in the curry into action. You can make a similar curry with other beans available in the markets too. If you guys like my recipes do share your  and comments on it. Till now I have mostly made authentic recipes and some have been experimental too. I hope in the new year I try my hands on other kinds of recipes and ideas too expanding my horizons. This curry dish was liked very much in my family and I hope you guys too will try it soon too. Do share your experiences and comments when you make the curry and enjoy it. Ingredients:-

  1. Rajma-250 gms
  2. Onion-1(finely chopped)
  3. Onion-dried mint and green chilly paste-1 tsp
  4. Ginger-Garlic Paste-1 tsp
  5. Tomato Puree-2 tbsp
  6. Cumin Powder-1 tsp
  7. Rajma Masala-1/2 tsp
  8. Garam Masala-1/2 tsp
  9. Turmeric Powder-1/2 tsp
  10. Salt-According to taste
  11. Tamarind Paste-1/2 tsp
  12. Sugar-1/2 tsp
  13. Vegetable Oil-2 tbsp

STEPS

Step 1

Soak rajma overnight and pressure cook it the next day till done.

Step 2

Take a pan and add vegetable oil. Now add the chopped onion and fry for two minutes. Then the ground onion-green chilly-dried mint paste and fry it too. Next, add ginger-garlic paste and fry. Then add the spices, salt, turmeric powder, red chilly powder, cumin powder, rajma masala, and garam masala and fry again.

B612_20200115_085325_612.jpgFry the masalas till they lose the rawness. Next, add the tomato puree or chopped fresh tomatoes and fry again. Fry all the masalas for a minute. And then add the boiled rajma and water and simmer on medium flame. Finally, add the tamarind paste and sugar and mix it well. Simmer for two minutes. Garnish with freshly chopped cilantro.

Our Sweet And Tangy Kidney Beans Curry is done. Serve it with steamed rice.

Hello, and welcome to my cooking corner again. Today I am going to share a recipe of split black gram flour, potato, and panir patties with you guys. Yesterday I bought some split black gram flour from the market. Normally in my household, I make salty pancakes from this flour. And it was my daughter’s idea to make patties out of it mixing in some potato and panir. And the idea was not bad.I have added some sugar too in this recipe. I hope you guys will like my idea. So do make it and let me know how it turned out. And now let’s learn the recipe…

Ingredients:-

  1. Split Black Gram Flour-100 gms
  2. Potato-2
  3. Panir(grated)-150 gms
  4. Onion-1
  5. Green Chillies-3
  6. Crushed Roasted Peanuts-2 tbsp
  7. Raisins-A few
  8. Turmeric Powder-1/2 tsp
  9. Cumin Powder-1 tsp
  10. Red Chilly Powder-1 tsp
  11. Ginger(grated)-1/2 tsp
  12. Garam Masala-1 tsp
  13. Dry Mango Powder-1/4 tsp
  14. Salt-According to taste
  15. Cilantro-As required
  16. Poppy Seeds-For coating
  17. Vegetable Oil-3 tbsp
  18. Dry Coconut(khopra)-Optional
  19. Sugar-1/4 tsp

STEPS

Step 1

B612_20200107_142419_886.jpgBoil the potatoes. Finely chop the onions, green chilies and cilantro. Peel the potato and mash it. Take a pan. Add the split Bengal gram flour and roast it for half a minute. Keep aside. Roast and crush the peanuts. Keep aside.

Step 2

Take a pan. Add vegetable oil and asafoetida. Now add the finely chopped onions, green chilies, grated ginger, and fry for half a minute. Now add the salt, turmeric powder, red chilly powder, cumin powder,garam masala, raisins and fry again. Next, add the roasted flour. Now add the mashed potatoes and fry for half a minute. Also, add the dry mango powder and a pinch of sugar. Add the grated panir. Fry everything well for half a minute and switch the gas off. Mix in some cilantro. You can also mix some dry coconut but it is optional.

Spinach, Red Lentil And Mixed Vegetable Burgers

SPINACH, RED LENTIL, AND MIXED VEGETABLE BURGERS

The last year was good and I tried my hands on different recipes. This year I want to continue to learn, explore and write better. Today I am sharing a recipe of a burger with spinach, lentil and veggie patty. It is healthier, creative and delicious. I hope you guys will like it. So let’s start with the making—
Ingredients:-

  1. Burger Buns-2
  2. Spinach-100 gms
  3. Red Lentil-100 gms
  4. Mixed Vegetables(Potato, Cauliflower, and Peas)-25 gms each
  5. Onion-2(big)
  6. Green Chillies-3
  7. Roasted Gram Flour-3 tbsp
  8. Ginger-Garlic Paste-1 tsp
  9. Turmeric Powder-1/2 tsp
  10. Red Chilly Powder-1 tsp
  11. Cumin Powder-1 tsp
  12. Garam Masala-1 tsp
  13. Dry Mango Powder-1 tsp
  14. Kasuri Methi-1/2 tsp
  15. Cheese-As required
  16. Cucumber-4 pieces
  17. Tomato-4 pieces
  18. Onion-4 pieces
  19. Sandwich Spread-As required
  20. Pepper Powder-1/2 tsp
  21. Salt-According to taste
  22. Vegetable Oil-4 tbsp

STEPS
Step 1

Wash and chop the spinach. Soak the red lentil in water for 3 hours. Wash, chop and blanch the veggies. Cook the red lentil in a saucepan too. Chop the onions and green chilies finely. Slice the cucumber, tomato, and onion into thin, round slices.
Step 2

Mash the blanched ingredients, the mixed veggies, and red lentil. Take a pan and add oil. Add the chopped onion, green chilies,kasuri methi and fry for a minute. Now add ginger-garlic paste, turmeric powder, red chilly powder, cumin powder,garam masala, dry mango powder, salt and fry for two minutes. Next, add the chopped spinach. Fry it.
Step 3

Now add the mashed vegetables and lentil to the masalas and add the roasted gram flour too in it. Fry everything for another minute. The whole batter should be thick and dough-like.

Make tikkis from the batter and shallow fry them. Now it’s time to assemble the burger. Firstly roast the buns. Take one portion of the bun and apply the sandwich spread. Now, put lettuce on it. Next place the tikki on it. Then put the cucumber, tomato and onion slices on the burger. Finally, sprinkle grated cheese. Close with the other half of the bun.

Our Spinach, Red Lentil And Mixed Vegetable Burger is ready. Serve it with french fries and orange juice or with anything you like.

Shallow-Fried Wheat Dumplings With Rasam

SHALLOW-FRIED WHEAT DUMPLINGS IN RASAM

Hello and welcome to my cooking corner again. We all know that dumplings are the easiest to make, healthier and the most popular comfort food of the world. It is made in many ways, either by baking or stuffing with our favorite fillings. In today’s world of busy schedules and the scourge of lifestyle-related diseases. People now have become more aware and prefer easily made dishes which can be made from scratch. Today I have made a slightly different variation of the recipe of wheat flour dumplings which I have dipped in Rasam. It is healthier, made quick and is a wonderful option on a wintry, chilly day. It can be had as a snack or teamed up with steamed rice or roti for a delicious supper.

Ingredients:-For the shallow-fried wheat dumplings:-

  1. Wheat Flour-2 cups(of 250 ml each)
  2. Salt-According to taste
  3. Pepper Powder-1 tsp
  4. Vegetable Oil-1 tsp

For the rasam:-

  1. Arhar Dal-250 gms
  2. Onion-1(big)
  3. Green Chillies-3
  4. Tomato-1(big)
  5. Turmeric Powder-1 tsp
  6. Red Chilly Powder-1 tsp
  7. Rasam Powder-2 tbsp
  8. Garam Masala- 1 tsp
  9. Tamarind Paste-2 tsp
  10. Jaggery-1 tsp
  11. Salt-According to taste

For the tempering:-

  1. Black Mustard or rai-1 tsp
  2. Curry Leaves-A few
  3. Asafoetida-A pinch
  4. Cinnamon Stick-1
  5. Vegetable Oil-2 tbsp

For the garnish:-

  1.  Chopped coriander-As required
  2. Roasted Peanuts or nuts of your choice-Optional

STEPS

Step 1

To make the wheat flour dumplings, firstly take wheat flour in a bowl. Add salt, pepper powder, vegetable oil in the given quantities and adding water make a pliable dough from it. Keep aside. Chop the onion, green chilies, coriander leaves, and tomato.

B612_20191225_123413_912.jpgNow after making the dough, take some dough and make small balls from it. Now make thin, round chapatis from it using a rolling pin. Now give the chapatis any shape you want to. Here, I have made triangular ones. But care should be taken to roll the dough ball thin. Next shallow fry the dumplings in butter. And keep aside.

Step 3

Wash and pressure cook the split pigeon pea lentil till done. To make the rasam take a wok and add all the tempering ingredients in it. When it splutters, add the chopped onion, green chilies and fry for a minute. Next, add the chopped tomato and add turmeric powder, red chilly powder,garam masala, salt and fry for another minute. After the ingredients are properly fried add the cooked dal, rasam powder, tamarind paste, and jaggery and cook for three-four minutes.

Now it’s time to serve our dish. Now add the dumplings in the rasam and simmer for two-three minutes. Serve this delicious, piping hot rasam garnished with toasted peanuts or any other nut of your choice and some fresh coriander.

Our Shallow-Fried Wheat Dumplings In Rasam is done.

Note point-For best results one should shallow fry the dumplings a little before serving and then put them in rasam. Or it could be the other way round.

Split Bengal Gram Dhokla With Spinach And Fenugreek Leaves

SPLIT BENGAL GRAM DHOKLA WITH SPINACH AND FENUGREEK LEAVES

Hello everyone. Welcome back to my cooking corner again. Today I am going to share a recipe of Split Bengal Gram dhokla With Spinach And Fenugreek Leaves. Earlier dhoklas were a predominantly Gujrati snack idea but now with time, it has become a favorite healthy snack recipe of entire India. It is made with different ingredients. We can make dhoklas from maize flour, semolina, etc. The most common one is made from besan. I have today made it with chana dal and added healthy greens to it. I generally give preference to making healthier food and sharing the same with you. So guys if you haven’t tried this healthy recipe yet, give it a try, comment and share feedback with me. So let’s start with the recipe…

Ingredients:-For the dhokla

  1. Split Bengal Gram(Chana Dal)-250 gms
  2. Spinach-50 gms
  3. Fenugreek Leaves-25 gms
  4. Asafoetida-A pinch
  5. Ginger-1 tbsp
  6. Green Chillies-3
  7. Eno Fruit Salt-1 tsp
  8. Salt-According to taste

For the tempering;-

  1. Black Mustard or Rai-1 tsp
  2. Curry leaves-5
  3. Green Chillies-3
  4. Vegetable Oil-1 tbsp

STEPS

Step 1

B612_20191214_141437_514.jpgWash and soak the split Bengal gram or chana dal overnight. Wash and chop the spinach and fenugreek leaves. Chop roughly the ginger and green chilies.

Step 2

In a grinder add the dal, spinach, fenugreek leaves, ginger, green chilies and grind it to a fine paste.

Step 3

Now take the dal out in a bowl and add salt and asafoetida to it. Mix well. Next, add the eno fruit salt in the dal paste. Squeeze half teaspoon of lemon juice in it. Mix again.

Now steam the batter in a steamer for 25-30 minutes. After it is cooled cut into pieces.

STEP 5

Take a pan and add all the tempering ingredients in it. Now garnish the dhokla with the tempering. You can also add some grated fresh coconut to the dhoklas but it is optional.

Our Split Bengal Gram Dhokla With Spinach And Fenugreek Leaves is done. Serve it with the green chutney.

Curd And Coriander Mint Chutney

Ingredients:-

  1. Fresh Green Coriander-100 gms
  2. Mint-50 gms
  3. Onion-1
  4. Green Chillies-2
  5. Raw Peanuts-6
  6. Crushed Garlic-1 tsp
  7. Curd-2 tbsp
  8. Salt-According to taste
  9. Water-For grinding

STEPS

Step 1

Wash and roughly chop the coriander and mint leaves. In a grinder, add the coriander, mint, chopped onion, raw peanuts, green chilies, crushed garlic, salt, and water and grind everything to a fine paste. Take it out in a bowl and keep aside. Add 2 tbsp of fresh curd in the chutney.

Our Green Chutney is done. Serve it with the dhoklas.

Split Black Gram Fritter Curry

SPLIT BLACK GRAM FRITTER CURRY

Hello everyone.Welcome to my cooking corner. Today I am sharing with you a recipe of Split Black Gram Fritter Curry. It is a recipe of spiced split black gram dough steamed ,shallow-fried and dipped in a thick onion-tomato gravy. It is tasty, innovative and healthier too. In my place, it is called IRHAR and is served during marriage ceremonies. In my first family, we preferred to eat chapatis at night only and my mom used to make it quite often. You can have it with tandoori rotis and rice too. I hope you guys will like it. Do try it and share your experience with me. So let’s start with the recipe—

Ingredients:-For the Split Black Gram fritters

  1. Split Black Gram-250 gms
  2. Cumin-1/2 tsp
  3. Asafoetida-A pinch
  4. Pepper Powder-1/2 tsp
  5. Red Chilly Powder-1 tsp
  6. Cumin Powder-1/2 tsp
  7. Garam Masala-1 tsp
  8. Salt-According to taste
  9. Water-As required

For the curry:-

  1. Onion-2
  2. Green Peas-100 gms
  3. Ginger-Garlic Paste-1 tsp
  4. Turmeric Powder-1 tsp
  5. Cumin Powder-1 tsp
  6. Red Chilly Powder-1 tsp
  7. Tomato Puree-1 tbsp
  8. Garam Masala-1 tsp
  9. Salt-According to taste
  10. Vegetable Oil-1 tbsp

For Garnish—Fresh Cream

STEPS

STEP 1

Wash and soak the split black gram overnight. Grind it a little coarsely without adding more water. Grind the onions into a fine paste. Mix all the above-given spices into the dough and keep aside.

STEP 2

Now make rolls from the dal batter and boil them in hot water for 15 minutes. When it hardens take out the rolls from water and let them dry.

STEP 3 Cut it into thin rounds and shallow fry till browned and crispy.

20191204_085318_20191204193544735.jpgNext, take a pan and add oil into it. Next, add the onion paste and fry it. Now I will add the ginger-garlic paste. Fry for two minutes. Next, add all the spices, turmeric powder, red chilly powder, cumin powder by mixing in water. In this way, our spices will not get burnt. Next, add tomato puree. Fry for two minutes. Now I will add the green peas and fry again for one-two minutes. Now it’s time to add garam masala. Fry for a minute. Now I will add the fritters to the gravy along with water and simmer for five minutes.

STEP 5
